Crispy Air Fryer Zucchini
Golden, crispy air fryer zucchini rounds with charred edges — 10 minutes of prep, 12 minutes of cooking, five pantry seasonings.
Ingredients
- 2 medium zucchini
- Olive oil spray (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
Instructions
- Slice the zucchini into uniform rounds (sticks or wedges work too) — keep every piece the same thickness so they cook evenly.
- Pat the slices thoroughly dry with a paper towel. This step is crucial: zucchini holds a lot of water, and skipping it leads to sogginess instead of crispiness.
- Season with salt, pepper, garlic powder, and paprika. Add a light spray of olive oil if you like — it’s optional.
- Set the air fryer to 375°F (190°C). Arrange the seasoned slices in a single layer with no overcrowding.
- Cook for 10–12 minutes, flipping halfway through, until golden brown with slightly charred edges.
- Keep a close eye during the last few minutes — every air fryer is a little different and they can go from golden to burnt fast.
Tips
- A sharp knife or mandoline keeps slices even — uneven pieces mean uneven cooking.
- Work in batches rather than stacking; overcrowding steams instead of crisps.
- Leftovers lose their crunch — this one is best fresh from the basket.
