Chicken of the Woods Recipe
Meaty, savory chicken of the woods mushrooms sautéed with garlic, olive oil, and lemon — golden in 7-10 minutes, served as a side or with pasta.
Ingredients
- 1 lb chicken of the woods mushrooms, fresh or frozen, cleaned thoroughly
- 2 tbsp olive oil (substitute with butter if desired)
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp fresh thyme (optional: use parsley or dill)
- Salt and pepper, to taste
Optional additions
- Chili flakes, for a subtle heat
- Grated Parmesan, for a savory, nutty flavor
Instructions
- Clean the mushrooms first: gently wipe them with a damp cloth to remove dirt. Avoid soaking them in water, as they may absorb too much moisture. Use a soft brush for delicate areas.
- Cut the mushrooms into thin, even pieces so they cook evenly and absorb flavors better.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until golden brown. A cast-iron skillet works well because it distributes heat evenly.
- Add the sliced mushrooms to the skillet. Stir and cook for 7-10 minutes until they turn golden brown. Avoid overcrowding the pan so they caramelize properly instead of steaming.
- Once golden brown, pour in the lemon juice and sprinkle the fresh thyme over the mushrooms. Stir gently to coat everything evenly.
- Season with salt and pepper to taste. Serve as a standalone side or pair with pasta, risotto, or toasted sourdough.
Tips
- Don’t overcrowd the pan: mushrooms release moisture as they cook, and overcrowding makes them steam instead of browning. Use a large skillet or cook in batches.
- Don’t overcook — cooking too long makes the mushrooms rubbery. Remove them from the heat once they turn golden and tender.
- Store fresh mushrooms wrapped in a damp paper towel in the refrigerator for up to a week. Avoid airtight containers, as they trap moisture and cause spoilage.
- Some mushrooms may be tougher, especially if harvested late in the season — cook a small piece first to make sure they’re tender before preparing the whole batch.
- Season gradually: the mushrooms’ natural flavor is delicate, so season lightly at first and adjust as needed.
