Ingredients
– 4 large eggs
– 100g granulated sugar
– 100g all-purpose flour
– 1 tsp vanilla extract
– 1/4 tsp salt
– 200g strawberry jam
– 200ml whipped cream
– Powdered sugar for dusting
Instructions
1. Preheat your oven to 180°C (350°F). Line a 10×15 inch jelly roll pan with parchment paper.
2. Beat eggs and sugar in a large bowl until light and fluffy.
3. Gently fold in the flour, salt, and vanilla extract.
4. Pour the batter into the pan and spread evenly.
5. Bake for 10–12 minutes until lightly golden.
6. Remove and let cool slightly. Roll the sponge in a clean towel dusted with powdered sugar.
7. Unroll, spread jam and whipped cream, then roll again.
8. Dust with powdered sugar and chill before slicing.
Notes
For best results, use room temperature eggs and don’t overbake the sponge. You can also swap the strawberry jam with raspberry or lemon curd for a fresh twist!
